Roncesvalles Weiße Schokolade ist frei von künstlichen Farb- & Konservierungsstoffen.  Hoher Kakaogehalt bei verhältnismäßig niedrigen Zuckeranteil.

Für die Herstellung der Schokolade zeichnet sich die handwerkliche Schokoladenmanufaktur der Familie Subiza verantwortlich, welche seit 1995 von der Regierung von Navarra offiziell mit dem Diplom für Handwerksmeister und Handwerksbetriebe ausgezeichnet wurde. Außerdem ist sie Mitglied der Vereinigung für handwerkliche Lebensmittel in Navarra.

Die Familie Subiza hat es verstanden, die Geheimnisse eines Handwerks, dessen Techniken Manuel Subiza Mitte des 19. Jahrhunderts in Frankreich erlernte, von Generation zu Generation weiterzugeben. Seine Ausbildung im französischen Baskenland, das eine lange Tradition in der Schokoladenherstellung hat, ist ein entscheidender Faktor für das Verständnis der Leidenschaft und Erfahrung, die das Unternehmen in die Schokoladenherstellung einbringt.
