Like all Ulterior wines, they are harvested by hand and produced using various ancient techniques.  Malolactic fermentation takes place in barrels, followed by six months of ageing in French oak and a further six months in clay amphorae (tinaja). Only 9000 bottles are produced and, as with all his wines, no clarification or filtration is carried out in order to preserve as much character as possible. The addition of sulphur is also minimal, just a touch is added at bottling to ensure the wines reach their destination intact!

Cherry red in colour with a medium dark red rim. On the nose it is complex with good intensity with earthy memories, roots and subtle mineral touch. It is balsamic and evokes memories of aromatic herbs, all associated with red fruits and plum. The herbs bring freshness and a subtle reminder of black liquorice, balsamic. On the palate, it shows excellent acidity and balance with ripe red fruits. A persistent, round and fresh wine. A new face in the viticulture of the natural region of La Mancha. The aftertaste is persistent with a remarkable strawberry character.
