A special sausage from the Balearic island of Mallorca is the sobrasada - this spreadable sausage with a protected geographical indication is made from raw and air-dried minced pork.
The spicy Mallorcan sobrasada has a deep red colour. This colour is due to the hot paprika powder and the curing of the sausage. Sobrasada has an amorphous shape because it is made from natural pork rumen.
