Among Spain's quality sparkling wines, Cava is probably the best-known seal of quality, which is only awarded to wines that have been fermented in the bottle according to the traditional method and come from the approved growing regions. This method of sparkling wine production was developed in France in the 18th century. Today, all high-quality sparkling wine products worldwide can be traced back to this type of traditional production. Spanish sparkling wine used to bear the same name as its French equivalent, champagne, due to its traditional bottle fermentation. After Spain joined the EU, a dispute arose with France over the name. The Spanish sparkling wine used to be called Champaña or Xampán in Catalan. Due to current EU law, it has borne the name Cava since 1986. Cava is therefore clearly more than just a Spanish sparkling wine.
