Mahón & Tetilla
Unique cow's milk cheese specialities from Spain
Spanish cow's milk cheese is characterised by the diversity of its regional variations and the high quality of its production. Although Spain is better known for cheeses made from sheep's and goat's milk, cow's milk cheeses have an equally rich tradition and unique flavour profiles. The climatic conditions and the feed of the cows in the different regions contribute to a special flavour.
One outstanding example is Mahón cheese from the Balearic island of Menorca. This cheese is made from cow's milk and is characterised by its slightly salty flavour, which comes from the proximity of the pastures to the sea. Its consistency and flavour vary depending on the degree of ripeness: from mild and creamy to strong and spicy, Mahón offers remarkable versatility.
Another characteristic feature of Spanish cow's milk cheese is its close connection to the region. In areas such as Galicia, where the humid climate creates ideal conditions for dairy farming, varieties such as Tetilla cheese are created. This soft, slightly acidic cheese has a characteristic cone shape and a silky texture.
