Premium product made from the best meat from black Iberico pigs fed on acorns and herbs in oak groves. Air-dried for more than four months. Delicate flavour with the characteristic aroma of pata negra.
 
Chorizo Ibérico de Bellota is the king of Spanish salami. It is made from the meat of black Iberian pigs fed on acorns and herbs in oak groves. Unlike many other producers, Simon Martin is also a breeder and therefore has complete control over the entire process, from the rearing of the pigs to the production of this delicious chorizo.
 
The peppers that give the chorizo its colour are dried in the sun and then ground into a fine powder (paprika). Only salt and paprika are used for preservation. The natural casing is filled with pieces of meat, fat and spices and dried in the open air for 4 months, giving the chorizo its characteristic, intense flavour and aroma. This salami is very rustic with large, coarsely chopped pieces of meat.
