Bentomiz - Ariyanas - David - 2018

• Bentomiz - Ariyanas - David - 2018

The Ariyanas David Tinto Dulce comes from 80 to 100-year-old vines of the Merlot grape variety. The grapes are harvested exclusively by hand due to the steep slopes. After the harvest, the grapes are spread out on mats in the sun. This causes water to evaporate from the grapes. What remains is a very high sugar content in the grapes, which goes into the must during pressing. Fermentation is stopped at 13% alcohol by quickly cooling the steel tank down to just under 2°C. This means that the wine does not have to be fortified. This means that the wine does not have to be fortified as with sherry and thus retains its balance between sweetness and acidity.

This sweet wine made from the red Merlot grape variety is perfect as an aperitif, as an accompaniment to chocolate or fruit desserts, but also with game dishes or menus with meat dishes.
