Vega del Oja is a mixed cheese made from cow's and sheep's milk with a maturation period of 35 days. The cheese is matured in the traditional way, which gives it a natural rind and a unique character. Its flavour is balanced, with a pleasant and delicate aroma. It has a pale ivory colour, a firm texture and small, evenly distributed holes. It comes from Los Cameros, which produces excellent Spanish farmhouse cheeses.
