A cheese made from 100% goat's milk, with a perfect texture and the unmistakable pearly white appearance of goat's cheese. This cheese is made from the milk of local livestock farmers in the Sierra de Cameros.
It has a slight acidity that is very characteristic of goat's milk, which, together with its intense flavour, makes it very pleasant and appetising at any time of day.
In addition, as is usual with our cheeses and our trademark, it is matured with natural moulds and offered with its natural rind. This is the result of the combination of mould formation on the rind and olive oil baths during the 60-day ripening process.

*A cheese loses its flavour if it is sealed for too long. This is why we cut the desired weight from the whole wheel into typical Spanish pieces / wedges for you, fresh on the day. Each cheese therefore receives this special quality treatment to preserve its authentic flavour, as you would expect from a Spanish weekly market.
