A classic blend of pasteurised cow's milk (min. 60%), sheep's milk (min. 20%) and goat's milk (min. 6%), which has been curdled with sheep's rennet. Matured in the cellar for 6 months, it develops a flattering, mild yet complex flavour profile. 55 %. fat in dry matter.

*A cheese loses its flavour if it is sealed for too long. This is why we cut the desired weight from the whole wheel into typical Spanish pieces / wedges for you, fresh on the day. Each cheese therefore receives this special quality treatment to preserve its authentic flavour, as you would expect from a Spanish weekly market.
