Among the twenty or so varieties of sheep's cheese in Spain today, Manchego (D.O.P.) is the most famous Spanish sheep's cheese.

The breeding of "Manchego sheep" and the production of Manchego has been widespread in the endless plains of La Mancha for centuries. The milk of these sheep is rich and tastes of grasses and wild herbs, on which they feed exclusively on the barren pastures of La Mancha. The characteristic hard cheese has an intense flavour. 

*A cheese suffers a loss of flavour if it is shrink-wrapped for too long. Therefore, we cut the desired weight from the whole loaf into typical Spanish pieces / wedges for you, fresh on the day.
