In this special white vegan chocolate, cow's milk has been replaced with ground almonds and freeze-dried cherries have been added. This is a nod to the classic Basque cake that originated on farms in the Iparralde region. It was originally filled with cherries from Itxassou, and later with pastry cream. At Gorrotxategi, ‘bean to bar’ stands for artisanal and transparent chocolate production, in which the entire manufacturing process is controlled in-house — from the selection of cocoa beans to the finished bar.
