Ortiz Sardines in olive oil in a jar

• Ortiz Sardines in olive oil in a jar

Ortiz sardines a la Antigua are considered a delicacy both regionally in Spain and far beyond its borders. Whether as a tapa or antipasti, the delicious sardines in olive oil are sought after worldwide. The production method of deep-frying the sardines in virgin olive oil and soaking them in oil gives the fish a particularly popular spicy aroma as well as a fine texture. Every single sardine still goes through a traditional treatment process in which each fish is checked and cleaned by hand.

The art of fishing is not an easy one. It depends on the weather and requires a lot of skill. For five generations, the Ortiz family business has been perfecting the art of catching fresh fish on the high seas.

Through technological innovations, fishing has changed a lot in the 125-year history of the company. Nevertheless, Ortiz has not lost sight of traditional fishing and gentle processing. Further processing is still done by hand for gentle processing of the fish.

In order not to harm the fish stocks of the world's oceans in the long term, sustainability is particularly close to the heart of the canned fish supplier. The season, region and fishing method are checked in detail before the fishing starts. In this way, Ortiz protects the fish population and excludes bycatch.
