The cardoon is a thistle-like plant and is also called cardy or Spanish artichoke. It belongs to the composite family.
Unlike the artichoke, it is not the flower heads but the fleshy leaf stalks that are used to make tasty dishes.

The family business Anko is located in Careita, in the heart of the Navarra region, the flagship of Spanish vegetable cultivation. Anko knows how to combine new technologies with traditional production methods, with the aim of offering healthy, natural and balanced products.
